A good, hearty Italian chicken soup with pasta and spinach.
- 6 cups Chicken broth
- 1 bag fresh Spinach, cut up
- 1 chicken breast, cut up into bite-size pieces
- pasta or spaghetti broken into small pieces
- 2 eggs, beaten
- Parmesan cheese, grated
- salt and pepper
Dust pieces of chicken breast with a little salt and pepper, then cook until done in a little olive oil.Remove and set aside.
Bring chicken broth to a boil, add spinach, pasta and chicken breast pieces.
Cook until pasta is done, then stir the beaten egg into soup while its boiling. shut off the heat and thats it!
Add salt and pepper to taste,
add parmesan cheese to the top when serving.
