Bay scallops are a particular delicacy, found only close to the Cape. We tend to take advantage of that. The flavor is lighter and sweeter than any other scallop. Don't confuse these with 'Calico Bay scallops' or some of the imitations you'll find in supermarkets - they can't compare.
- 1 qt Cape scallops( a little over 2 lbs)
- 1 qt milk
- 1/4 c. butter
- 1 tbsp. flour
- 1/2 tsp salt
- 1/8 tsp pepper
- 1 tsp paprika
You can add veggies to this, use whatever you have, although eggplant might be a little weird.
Cook scallops in butter for 5 min, melt remaining butter in another pan add flour and blend well. Add scalded milk, salt and pepper and cook for about 15 mins. serve with the paprika as a garnish
