It seems like everyplace you turn there is some sort of clam shack selling Fried Clams. And they range from delicious to something we won't describe. This is how it was done in your grandmother's time and it's still as good as it gets.
- 1 egg yolk, beaten
- 1/2 cup milk
- 1 tbsp butter (melted)
- 1/2 tsp salt
- 1/2 c flour
- 1 egg white beaten stiff
- 2 doz clams cleaned
Combine beaten egg yolk and 1/2 the milk, add melted butter,add salt to flour, mix together and beat into the egg milk mixture until smooth.
Add rest of milk, then fold in stiffly beaten egg white.
Dip each clam into batter and fry in deep fat fryer at 375 untill brown, turning frequently, drain on paper
This also is great with fish, oysters, shrimp and anything else you'd like
