French Onion Soup

Back when we were young(er) there was a restaurant in Orleans, on the way to the beach, that would have live jazz on a Sunday afternoon. You could come in early, sit and listen to some very good music and have some of their French Onion Soup, a glass of wine and a hot ham and cheese sandwich on toasted French bread. By the time you'd finished it, the place had started to fill up and the band would really get going. And life was pretty good.

  • 1 1/2 cups thinly sliced onions
  • 3 Tbsp butter
  • 6 cups of beef broth
  • 1/2 tsp pepper
  • a bit of red wine
  • parmesean cheese
  • french bread (toasted)
  • thick slices of your favorite cheese: Swiss or Gruyere are good

Saute sliced onions in the butter until very well browned but not scorched, move to your soup pot.
Add beef stock, wine and pepper and simmer over low heat for 30 minutes.
Put into small casserole dishes with a slice of toasted French bread at the bottom, sprinkle with the Parmesan and add a thick slice of cheese on the top.
Bake at 375 until cheese is melted.

You could do worse than having this with a glass of wine, a toasted Ham and Swiss on hot crusty French bread and a jazz album playing in the next room.
