Chowder? Made with corn? Yes, it's an old Cape Cod dish and it is very, very good.
- 1/2 c salt pork cut up
- 1 onion cubed
- 1/2 cup celery sliced
- 2 cups milk
- 2 cups water
- butter
- 1 cup diced potatoes
- salt pepper
- bay leaf
- 3 tbsp flour
- 2 cup whole kernel corn
Saute salt pork until crispy and brown, add onion and celery.Saute until golden brown
Add water, salt and pepper, bay leaf and potatoes and simmer until the potatoes are tender.
After the potatoes are tender mix in 3 tbs flour
(A secret my nana taught me so it doesnt curdle is to mix the flour in with a
little water in a bowl then pour it in the boiling soup and whisk it well )
Heat for around 5 min, then add milk, and 2 cup whole kernel corn. (DO NOT BOIL)
Add a dollop of butta and serve
This and some Anadama bread makes a winter day seem downright pleasant.
