Cod Fish Cakes

Tasty, these are. Good for breakfast ( a Christmas
Morning tradition with our family) or any time, I could happily have
'em every day.
- 1 cup salt cod, freshened
by soaking in cold water overnight or longer
- 2 c diced potatoes
- 1 egg
- Salt and pepper
Pull
apart the cod,cook with potatoes in simmering water until tender, drain
thouroughly!
Mash together and stir in 1 egg, season with salt and pepper
Cool it in fridge, then shape into cakes like a biscuit and fry in oil
until golden brown
Good
and traditional with Baked Beans, maybe a little Cole Slaw
