Shellfish

Clam Dip
  • 4 oz cream cheese
  • 1 6.5 oz can minced clams
  • 2 Tbsp reserved clam juice
  • 1/4 tsp white pepper
  • 1/2 tsp sherry
  • 1 Tbsp chopped parsley
  • 2 Tbsp sour cream
  • 1 tsp lemon juice
  • 2 cloves pressed garlic
  • 3 drops Worcestershire
  • 1 tsp finely diced red onion
  • optional..cilantro
  • optional...habanero
  • optional...more fresh lemon or lim

  • Drain the clams and reserve the liquid. Put the clams in a bowl big enough to mix everything and then add the rest of the ingredients. Only add two tablespoons of the clam juice, but save the rest as you may add more later.
  • Mash and mix everything up with a fork until it is smooth and well mixed. If it's to think, add more clam juice. The dip gets much of it's flavor from the juice rather than the clams, so don't be afraid to add a bit too much. But don't make it runny.
  • Chill and serve with chips.

When you want a snack and long for some seafood , nothing is better than this for a comfort food. It is great to make ahead and have as an appetizer for family get togethers or parties too. I add a little habanero pepper to mine, and maybe a little more lemon juice and cilantro, but this recipe is the basic one for those who want a normal clam dip...you can always experiment after wards. But try it with some fresh cilantro and more lemon and a little zing of hot pepper , you just might like it! You can also substitute sour cream for cream cheese.
