Baked Striped Bass with
 Herb Stuffing

You can use this for any Cape Cod fish. Striped Bass is especially good but cod, haddock and bluefish are mighty fine too.

  • Striped Bass 8-10 lbs - with head tail and guts removed, scaled
  • 2 c. seasoned bread crumbs
  • 1 c. grated carrots
  • 1 cup minced onions
  • 1 cup chopped mushrooms
  • 1/2 c. chopped parsley
  • 1 egg
  • 2 tbps fresh lemon juice
  • 1 tbp minced garlic
  • 2 tsp salt
  • 1/2 tsp pepper
  • 1/4 tsp. marjoram
  • 6 to 8 strips bacon, hickory smoked by preference

Combine all, mix well,stuff into fish cavity, and add 6-8 strips of bacon on top of the fish,bake at 350 until fish flakes.

Pour a little Mornay Sauce over each serving, great with rice or potatoes and some steamed summer vegetables.
