You
can use this for any Cape Cod fish. Striped Bass is especially good but
cod, haddock and bluefish are mighty fine too.
- Striped Bass 8-10 lbs - with head tail
and guts removed, scaled
- 2 c. seasoned bread crumbs
- 1 c. grated carrots
- 1 cup minced onions
- 1 cup chopped mushrooms
- 1/2 c. chopped parsley
- 1 egg
- 2 tbps fresh lemon juice
- 1 tbp minced garlic
- 2 tsp salt
- 1/2 tsp pepper
- 1/4 tsp. marjoram
- 6 to 8 strips bacon, hickory smoked by
preference
Combine all, mix well,stuff into fish
cavity, and add 6-8 strips of bacon on top of the fish,bake at 350
until fish flakes.
Pour a little Mornay Sauce over each
serving, great with rice or potatoes and some steamed summer vegetables.
